Course Summary

Unit 1: Understand allergens, allergies and intolerances
In this course, you will learn what food allergies and intolerances are and the differences between them, along with diseases that can be caused by specific food types. You will look at the prevalence of different allergies and intolerances, and how they can develop. You will learn about common airborne allergens and the 14 main food allergens. You will learn about testing methods and treatments for allergies and intolerances, as well as how to manage food intolerances.

Unit 2: Food labelling and packaging
You will learn about the importance of food labelling and what should be included in the labelling of pre-packed and non-pre-packed foods. You will also learn about the foods that don’t need to be marked with an ingredient list on packaging and how allergenic ingredients should be displayed on food labels. You will learn what is meant by ‘precautionary allergen labelling’ and about ‘free-from’ labelled foods. You will gain an understanding of how to avoid food allergen cross-contact. You will learn about regulations and legislation for food labelling and allergens and what to do if a food product has been incorrectly labelled.

Unit 3: Allergy Awareness for those working with children and young people
Finally, you will learn about the signs and effects of allergic reactions, including anaphylaxis and how to treat it. You will consider ways of reducing symptoms, including avoiding exposure to allergens, wearing jewellery to identify allergens, and taking medications that can be used to control allergic reactions. You will learn about how specific allergies and related conditions can be treated, first aid and how to recognise allergy symptoms.
